Chinese Fresh Broccoli Salad


Ingredients:


1 1/2 pounds fresh broccoli
2 tbsp soy sauce
1 tbsp wine vinegar
3 tbsp peanut oil
2 garlic cloves, crushed
1 tsp sugar
1/3 cup chopped walnuts or almonds
salt
pepper


Directions:


Cut the broccoli into diagonal pieces and parboil it in salted boiling water for 6 minutes or until tender yet firm.
When the broccoli is ready, rinse it quickly in cold water, then drain and let it cool.
When the broccoli has fully cooled, transfer it into a serving dish.


Mix the soy sauce, wine vinegar, peanut oil, sugar, garlic and nuts into a small bowl.
Pour the mixture over the broccoli. Sprinkle the salad with nuts and serve.
