Broccoli with Mayonnaise Dressing


Ingredients:


2 pounds fresh broccoli
freshly ground pepper
lemon juice
3 shallots, finely chopped
1/4 cup white wine
1 tbsp finely chopped fresh chives
1/2 cup mayonnaise
1 hard-boiled egg, sieved


Directions:


Wash the broccoli in cold water. Trim the stems to a maximum length of 3".
Boil in lightly salted water for 8 to 10 minutes or until tender yet firm.
When the broccoli is ready, drain it a place it on shallow serving dish.
Sprinkle it with freshly ground pepper a few drops of lemon juice.


Cook the shallots with the wine in a saucepan until the liquid has fully evaporated.
Mix the shallots, chives, and mayonnaise together and pour the mixture over the broccoli.


Chill this salad for 2 to 3 hours before serving. Garnish it with the sieved hard-boiled egg.
