Three Bean Salad
Ingredients:
1/2 cup dried cranberry beans
1/2 cup dried fava beans
1/2 cup borlotti beans
1 cup yellow wax beans, trimmed, cut into 1" pieces
1 small red onion, chopped
1 cup pea shoots
2 tbsp cider vinegar
1 tsp honey
1/4 cup olive oil
3 fresh sage leaves, cut into strips
salt
ground black pepper
Directions:
Cook all the beans except the wax beans in simmering water for about
45 minutes or until they are tender.
Cook the wax beans in salted boiling water for 3 minutes. Drain
the beans and let them cool.
Combine the the beans with the pea shoots and onions in a large
bowl.
Whisk the vinegar, honey and oil together in a small bowl.
Toss this mixture with the beans, pea shoots and onions, salting
and peppering to taste.
Sprinkle the salad with the sage and serve.
