Irish Sour-Cream Dressing


Ingredients:


2 hard boiled eggs
1 tsp dry mustard
2 tsp sugar
3 tsp malt vinegar
1 cup sour cream
1/3 light cream
salt
freshly ground black pepper


Directions:


Pass the eggs through a sieve then pound them together with the mustard and 1 tsp of sugar until they are well blended.
Slowly add the vinegar while constantly stirring with a wooden spoon. Add the creams in the same way.
Blend the mixture well, seasoning with the salt, pepper and sugar to taste. Chill this dressing until it is ready to serve.
