Cooked Dressing for Caesar Salad

Now you can bring the American favorite right to your own table to share with the family.

  • 1/2 cup pure vegetable oil
  • 1 clove garlic, finely crushed
  • 2 large egg yolks
  • 2 tablespoons wine vinegar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon Worcestershire sauce

Grab a jar with a tight fitting lid and pour the oil in and place the garlic into the jar. Place jar in the refrigerator for either several hours or you may leave in overnight. When it’s ready, remove the garlic and set the jar of oil aside. Now in a small sauce pan, cook remaining ingredients over low heat stirring continuously. When the mixture thickens and starts to bubble at the edges, remove it from the heat. Let it cool for 10-20 minutes. Pour the ingredients from the pan into the jar of oil you set aside earlier. Cover and shake until it is well blended or you can use a regular blender instead. Cover and chill until use. This recipe makes about a 2/3 cup.
