This dish is good for the vegetarian in your family. It is also low in fat and high in protein.\r\n\r\nPreheat the toaster oven to 350 degrees\r\n\r\n1 tbsp butter\r\n1 small onion finely chopped\r\n1 garlic clove minced\r\n1/2 cup sliced oyster mushrooms\r\n1/4 cup minced celery\r\n1/2 cup wild rice\r\n1/2 cup slivered almonds\r\n1 1/2 cups chicken stock\r\n\r\nIn a frying pan using medium head melt butter and cook onion, garlic, mushrooms and celery for 5 minutes until tender. Stir in wild rice and almonds and cook for 3 minutes or until numts begin to brown.\r\n\r\nPut rice mixture in a casserole dish and pour hot chicken stock over it. Cover the dish and bak for on hour or until rice is tender. Season to taste with salt and pepper.
