1 medium size Spaghetti Eggplant, sliced in rounds (1/2 inch in thickness)\r\n1 tablespoon Olive Oil\r\n1 small red pepper, roasted and chopped into large pieces\r\n100 grams of firm round goats cheese\r\n\r\n\r\nPreheat oven to 400 F and brush eggplant with olive oil and bake for 5 mintutes. Turn slices and brush will olive oil again and bake another 5 minutes. Take eggplant out of oven and put red pepper and a slice of goats cheese on each piece. Place the eggplant back in the oven and bake for approximately 5 more minutes or until the cheese starts to get soft.

Hey, cool handle... I watch the OC sometimes.. but don't tell any of my buddies! :lol: Thanks for the recipe, I have always wondered what to do with Eggplant when I see it in the store. I think I will try this out in the near future.
