Cheese Creamed Potatoes
Proportions for this recipe are 1 cup sauce to 2 cups cooked potatoes.\r\n\r\nCheese Sauce:\r\n\r\n3 tbsp butter\r\n3 tbsp flour\r\n2 1/4 cups milk\r\n3 pimentos\r\n1 1/2 cups grated cheese\r\n3/4 tsp salt\r\n1/4 tsp paprika\r\n\r\nMelt butter then stir in flour and salt. Then add the milk and cook until thickened. Add grated cheese and mix. To this sauce add potatoes which have been boiled, peeled and cubed. Fold in chopped pimento and put in greasec casserole dish. Sprinkle with paprika and bake in 400 degree oven until bubbly.
