Default Potato Skins

This recipe originally called for making 24 skins, however, I cut it in half. So if you want more, then just double it. \r\n\r\n3 medium baking potatoes (about 1 pound)\r\n1/8 cup melted butter\r\n1/3 cup finely chopped red or green peppers\r\n1 small onion chopped\r\n1 clove of minced garlic\r\n1 tbsp olive oil\r\n1/2 cup shredded cheddar cheese\r\n2 slices of crisp cooked bacon, crumpled\r\n1 tbsp chives (snipped if fresh)\r\n\r\nPrick baking potatoes with a fork and bake at 425 for 45-50 minutes or until tender. Cut into quarters and scoop out the insides (reserve for another use), leaving 1/4 inch thick shells. Brush both sides of potato skins with melted butter and place cut side up on a baking sheet and bake at 425 for another 10 - 15 minutes or until crisp.\r\n\r\nFor the topping: in a medium sauce pan cooke the peppers, onion, and garlic in hot oil until the onion is tender but not brown. Remove saucepan from heat and cool slightly. Stir in cheese, crumbled bacon, and chives. Spoon onto potato skins then return to oven and bake about 2 minutes or until the cheese melts.

Thanks for posting this hockeynut99... I have been searching around for a while for a good skin recipe. I usually order them when I am out with the guys after a round of golf and thought they would be good to make at home, but I never found a recipe for them! :lol: \r\n\r\nStan 8)

Gosh, these sound good right about now. I'm starving!! I probably shouldn't be reading all these recipes - I'm about to raid the refrigerator LOL. I'll have to make them before I go on my annual "diet" in January.... :lol:

Really good post hockeynut! I am like Stan, always order skins when I am out with my buddies, but never really sat down and thought about how to make them at home. The recipe looks pretty easy and with the holiday season just around the corner, it is always good to have some variety in finger foods when the guests come over.

Alright! Cool recipe! Just in time for New Years and Superbowl parties! Glad I found it. Always wanted to make some skins at home and like some of the other people around here, no idea how to make them!

Hey, just stopped by after a night of hockey. Glad to see everyone is enjoying the Skin recipe I posted. Wow, Superbowl party Mel... When and where?? :lol:
