Default Broiled Eggplant

I came across this recipe last week and I tried it over the weekend and it was really good. So I thought I would share it with everyone.\r\n\r\n1 medium eggplant.. about 1 pound\r\n2 tablespoons finely chopped onion\r\n1 tablespoon olive oil\r\n2 cloves of garlic minced\r\n1/4 cup grated parmesan cheese\r\n1 tablespoon basil (crushed if dried, snipped if fresh)\r\n\r\nWash and peel the eggplant then cut crosswise into 1/2 inch thick slices. Place eggplant slices on the unheated rack of a broiler pan. \r\nCombine onion, olive oil, and garlic... spoon half of the onion mixture over the eggplant slices. Broil 4 to 5 inches from heat for 6 minutes then turn. Spoon the remaining onion mixture over eggplant slices.\r\n\r\nCombine the parmesan cheese and basil; sprinkle over eggplant slices. Broil for 3 to 5 minutes more or until eggplant is tender.
