Default Baked Quesadillas

This is a great way to use up leftover chicken or even turkey. 1 cup chopped up chicken 1 grilled red pepper, cut into pieces 1/2 cup of Salsa 1 tomato cut up 2 green onions cut up 1 cup of shredded cheese 5 to 10 medium Tortillas In a bowl mix all of the ingredients except for the cheese and Tortillas. Spread the mix on the Tortillas and sprinkle the shredded cheese on top. Fold the Tortillas in half and bake at 325 until lightly browned. Remove from oven and cut into halves or quarters and serve with sour cream, salsa or guacamole.

I'll do the same thing - I'll just use what I have in the fridge. I will let my kids choose what they want to put into it too, we had leftover Spanish rice one night and the next day that's exactly what my son wanted in his quesadilla. It was pretty tasty too.

I like doing quesadillas in the toaster oven too. I don't like the way they turn out in the microwave...the tortilla is a little bit too soft to my liking. I'll put them in the oven too under the broiler if I'm making a lot of them but usually if it's for myself it's quick and easy to throw it into the toaster oven.

Wow, I just came in here off of another link and there are all of these great recipes! I saw this one and it sounds great! I might even try it on the BBQ in the summer. But I don't feel like waiting that long to try it, soooo I think I might use it after Christmas. I am always looking for new ways to serve left over turkey! :lol:
