This salad ends up adding a nice pink/red color to your table setting....\r\n\r\n4 blood oranges\r\n1 cup thinly sliced radishes\r\n1/2 cup thinly sliced red onion\r\n1/4 cup finely diced celery\r\n2 tbsp blood orange juice\r\n1/4 cup olive oil\r\n1/2 cup looselyy packed mint leaves, shredded\r\nsalt and pepper to taste\r\n\r\nFinely zest one orange and place zest in a small bowl. Peel all of the oranges and slice into rounds. Place in a large bowl and add the radishes, onion and celery then mix gently.\r\n\r\nThen add the juice to the zest whisk in olive oil, season well and pour over the salad. Let the salad sit at least 30 minutes before serving and just before serving add the mint.\r\n\r\nEnjoy!
