Default Spinach Salad

When I was younger I did not like spinach that much. Maybe it was because my mother over cooked it. I guess I am still not that fond of it when it is cooked, however, baby spinach in salad is great! Lately I have been making this Spinach Salad quite a bit and everyone seems to like it. 3-4 cups baby spinach (washed) 2 carrots, peeled, then sliced 1 red pepper (cut into small pieces) 1/2 and english cucumber (sliced, then quarter the slices) 5 radishes (optional) 2 plum tomatoes 4 mushrooms 1/4 to 1/2 a cup of feta cheese (crumbled into the salad) I mix all of the ingredients and for the dressing I use either President's Choice Roasted Red Pepper & Goat Cheese Vinaigrette or Kraft Signature Red Wine & Thyme dressing.
