Default Cucumber/Tomato/Onion Salad

I love to make this salad in the summer. \r\n\r\nI dice up one cucumber, one red onion, and one tomato. I'll drizzle a little bit of olive oil over it, season it with salt and pepper and that's it!! I'll refrigerate for at least an hour before serving. It tastes even better the next day.

This sounds like a quick and easy side dish. I had a friend who would do something like this with corn, onion, and tomatoes. It was almost like a corn salsa relish. We were over at her house for dinner one night and she used that to put on the fish she was serving. It was great.

This information will hepl you.... While cutting tomatoes into slices, use a bread sknife instead of an ordinary knife. The skin remains intact - also the task is executed faster....
