Curried Chicken Salad
2 cups shredded cooked chicken\r\n1 medium apple, chopped\r\n1 cup chopped fresh pineapple\r\n1 cup thinly sliced celery\r\n1/2 cup seedless green grapes\r\n1/2 cup seedless red grapes\r\n1/2 cup golden raisins\r\n1/2 cup chopped green onions\r\n1/3 cup chopped pitted dates\r\n1/2 cup toasted sliced almonds\r\n\r\nDRESSING\r\n1 cup reduced-fat mayonnaise\r\n1/2 teaspoon curry powder\r\n2 tablespoons apple or orange juice\r\n\r\n1. In large bowl, combine all salad ingredients, reserving 2 tablespoons almonds for garnish.\r\n2. In small bowl, combine all dressing ingredients; blend well. Add dressing to salad; toss gently to mix. Garnish with reserved 2 tablespoons almonds.\r\n\r\n6 (1 1/3-cup) servings\r\n\r\nPER SERVING: 370 calories, 19.5 g total fat (3 g saturated fat), 16.5 g protein, 35 g carbohydrate, 50 mg cholesterol, 360 mg sodium, 4 g fiber
