Default Apple, Walnut and Mixed Green Salad

I made this salad and brought it to a friend's house for Thanksgiving. I got lots of compliments on it. Ya gotta love Cooking Light!! That's where I get most of my recipes. \r\n \r\n\r\nTossing the cubed apples with lemon juice will help keep them from turning brown. If you prefer sharper onion flavor, use red onions instead of Walla Wallas. \r\n\r\n1 cup sweetened dried cranberries (such as Craisins) \r\n3/4 cup apple juice \r\n1/2 cup zinfandel or other fruity dry red wine \r\n1/2 cup cranberry juice cocktail \r\n3 tablespoons minced shallots \r\n1 1/2 tablespoons fresh lemon juice \r\n1/2 teaspoon salt \r\n1/4 teaspoon freshly ground black pepper \r\n1 tablespoon walnut oil \r\n10 cup gourmet salad greens \r\n3 cups cubed Gala apple (about 2 apples) \r\n1 cup thinly sliced Walla Walla or other sweet onion (about 1 medium onion) \r\n1/3 cup coarsely chopped walnuts, toasted \r\n\r\nCombine cranberries and apple juice in a medium saucepan; bring to a boil. Remove from heat; let stand for 10 minutes. Drain cranberries; discard apple juice. Set cranberries aside.\r\nBring wine and cranberry juice to a boil in pan, and cook until reduced to 1/3 cup (about 8 minutes). Pour wine mixture into a medium bowl; add shallots, lemon juice, salt, and pepper. Gradually add oil, stirring with a whisk.\r\n\r\nCombine cranberries, greens, apple, and onion in a large bowl. Drizzle dressing over salad; toss gently to coat. Sprinkle with toasted walnuts. \r\n\r\nYield: 10 servings (serving size: about 1 1/3 cups salad and about 1 1/2 teaspoons walnuts)

That does sound tasty.\r\n\r\nI used to subscribe to Cooking Light. I let that subscription lapse. I was taking too many magazines and had to let some go. I have a few Cooking Light books too.

I get the Cooking Light Magazine and love it. It has tons of great healthy recipes in it. I was going a little bit overboard on my magazines too and ended up cacelling a few of them but I wanted to make sure I kept Cooking Light!!

Walnut oil? I've never heard of that before. It sounds expensive too. I wonder if I can just omit it. I don't want to buy an expensive thing of walnut oil and I would probably use it only once. Could you tell me how much you paid for it?

Right now I subscribe to Cooking for Two, Easy Home Cooking, and Cooking Club of America. I let Light & Tasty and Simple & Delicious lapse. Kind of sad since I had both from the very first issue. I'm asking for a subscription to Every Day with Rachael Ray for Christmas.\r\n\r\nI found different prices of walnut oil online. I guess it all depends on quality.

I've gotten the Taste of HOme magazine as a Christmas present from my sister a couple of years ago and unfortunately don't get it anymore. There are some really great recipes in there!! I have one of RAchel Ray's cookbooks, I believe it was the very first 30 minute meals edition that she did. I love her...I am interested in her cookware as well.

I get Taste of Home every time they offer me a free one, but I just don't like it as much as I like Reiman's other cooking magazines. \r\n\r\nFunny you should mention Rachael Ray's cookbooks and cookware, they're on my Christmas list too.

I want to get her whole cookware set...I've seen it at Linens N Things. I love the orange enamel set..it's a 10 piece set that runs around $150 but they always have coupons so you can get it for cheaper than that!! I hope I do get it...we shall see come Christmas Day.

I want the hard anodized set. I don't like that her favorite color is orange. I hate orange. And she hates one of my favorite colors, pink. :lol: With the hard anodized set just the handles are orange; I can live with that. Kohl's sells her cookware too. I'm not sure which set it is, though. I linked to the set I want on her website on my Christmas list. :wink:

I wish she had more of a variety of colors to choose from. So far I have only seen the orange, blue, and the hard anodized. I don't like any of those colors. If I had to pick one, I would probably choose the hard anodized one. That one seems the most neutral.
