Here's a healthy recipe for chicken salad...it tastes absolutely yummy without the guilt!!\r\n\r\nCHICKEN SALAD MAKEOVER\r\n\r\nServings: 4 to 6\r\nSource: 5 a Day For Better Health\r\n\r\nINGREDIENTS\r\n\r\n- 2 cups cooked chicken breasts, diced\r\n- 1-1/2 cups California seedless grapes\r\n- 1 medium apple, cored and sliced\r\n- 1/2 cup each raisins and diced celery\r\n- 1/2 tsp. dried tarragon, crushed\r\n- Salt and pepper to taste\r\n- 2 to 4 tbsps. each low-fat mayonnaise and yogurt\r\n- 1/4 cup chopped parsley\r\n- Lettuce leaves\r\n- Sprig of thyme, optional\r\n\r\nDIRECTIONS\r\n\r\nCombine all ingredients except lettuce and thyme; mix well.\r\nServe chicken salad on lettuce leaves.
