I just love snow peas in a stir fry! So when I came across this salad a while back it really caught my attention! Now if you are not able to get Chinese cabbage, regular cabbage or red cabbage is a viable substitute.

\r\n\r\n4 cups torn Chinese cabbage\r\n1 cup snow peas, halved crosswise\r\n1/2 cup mushrooms, quartered or straw mushrooms, halved\r\n1 medium carrot thinly sliced\r\n1 green onion thinly sliced\r\n\r\nIn a large mixing bowl combine all of the ingredients and toss lightly to mix.\r\n\r\nDressing:\r\n\r\n3 tbsp vinegar\r\n3 tbsp salad or olive oil\r\n2 tsp soy sauce\r\n1 tsp sugar\r\n1/8 tsp toasted sesame oil\r\ndash of pepper\r\n2 tsp toasted sesame seeds\r\n\r\nMix all ingredients except the sesame seeds in a covered jar and shake well. Pour dressing over mixture and then add the sesame seeds then toss lightly to mix.
