Herbed Summer Salad
Dressing:\r\n\r\n1/4 cup salad or olive oil\r\n3 tablespoons white wine vinegar\r\n1 green onion thinly sliced\r\n2 tablespoons snipped parsley\r\n2 tablespoons light mayonnaise\r\n1 tablespoon snipped fresh basil or 1/2 teaspoon dried basil crushed\r\n1 tablespoon snipped fresh dill or 1/2 teaspoon dried dillweed\r\n1 teaspoon snipped fresh oregano or 1/4 teaspoon dried oregano crushed\r\n1/4 teaspoon salt\r\n1/4 teaspoon pepper\r\n1 clove garlic minced\r\n\r\nIn a screw top jar or mixer combine al of the ingredients and shake well then set aside.\r\n\r\nSalad:\r\n\r\n2 medium yellow summer squash or zucchini, cut into 1/4 inch thick slices\r\n2 small tomatoes cut into wedges\r\n1 cup sliced mushrooms\r\nlettuce leaves\r\n\r\nIn a large mixing bowl combine yellow summer squash or zucchini, tomatoe wedges, and mushrooms. Pour dressing over all and stir gently to coat. Transfer to a lettuce lined salad bowl.\r\n\r\nEnjoy!
