Honey Mustard Coleslaw
3 cups shredded green cabbage (about 1/2 of a medium head)\r\n2 medium carrots shredded\r\n1 medium pear or appl, cored and coarsley chopped\r\n\r\nIn a large bowl mix together the cabbage, shredded carrot, and chopped pear or apple then set aside.\r\n\r\n3 tbsp olive oil\r\n3 tbsp coarse-grain brown mustard or Dijon style mustard\r\n2 tbsp lemon juice\r\n2 tbsp honey\r\n1 clove garlic, minced\r\n2 tbsp chopped peanuts or cashews\r\n\r\nIn a container combine olive oil, mustard, lemon juice, honey, and garlic. Cover and shake well then pour over the cabbage mixture. Toss lightly to coat then cover and chill for 2 to 24 hours. Sprinkle the coleslaw with peanuts or cashews before serving.
