4 cups torn mixed greens\r\n1 cup enoki mushrooms\r\n1/2 cup cubed creamy Havartie, Brie, or smoked cheddar cheese\r\n1/4 slivered almonds or pinenuts, toasted.\r\n\r\nIn a large mixing bowl combine torn mixed greens and mushrooms. Toss lightly to mix. Mix in Rasberry vinaigrette and top with cheese and nuts.\r\n\r\nRasberry Vinaigrette:\r\n\r\nIn a screw top jar combine 3 tablespoons rasberry vinegar, 3 tablespoons salad oil, 1 tablespoon snipped parsley, and 1 teaspoon sugar. Cover and shake well. Makes 1/2 cup.

Sounds yummy!! I don't think I've ever had enoki mushrooms. Are they much different from just your regular mushroom? I love adding nuts to my salad. I'd rather add that as a crunch than croutons. As far as the raspberry vinegar goes, I had no idea that this was even available!!

You can buy Rasberry Vinegar at those fancy specialty shops. I pick mine up at a local store here in Vancouver. As for Enoki mushrooms, yes they are different. If you can not find them where you are you could also try Shitaki mushrooms or even Portabello mushrooms.
