Default Tomato recipes

Do you like tomato? This is one of my favorite food. Just some recipes for you:\r\n\r\n\r\nTomato and Avocado-Goat Cheese Crostini\r\n\r\n1 each French baguette bread\r\n1/3 cup Olive oil\r\n2 tsp. Garlic, minced\r\n2 each Avocado, ripe\r\n4 oz. wt Mild goat cheese - chevre\r\n1/4 tsp. Salt\r\n1 1/2 cups Roma tomatoes, seeded, diced 1/4 "\r\n2 Tbsp. Extra virgin olive oil\r\n1/2 tsp. Salt\r\n1/4 tsp. Black pepper, ground\r\n1/4 cup Basil, fresh chopped\r\nSmall basil leaves for garnish\r\n\r\nPre-heat oven to 350 degrees.\r\nSlice bread into 1/4 " thick diagonal slices.\r\nIn small bowl, combine garlic and olive oil.\r\nBrush bread slices lightly with garlic oil. \r\nArrange on sheet pans in single layer.\r\nBake crostini for 10-15 minutes until golden brown and crisp.\r\nRemove from oven and let cool.\r\n\r\nThese can be made ahead of time and stored in an airtight container. \r\nBe sure to let cool completely before storing.\r\n\r\nIn bowl combine avocado, goat cheese and salt. Mix until smooth.\r\n(To make in advance, save avocado pit and bury in mixture to prevent browning.)\r\n\r\nIn separate bowl, combine tomato, extra virgin olive oil, salt , pepper and basil.\r\n\r\nTo serve, spread each crostini with about 1 Tbsp. of avocado mixture, then top with tomato-basil mixture. Garnish with small basil leaves if desired.\r\n\r\n----------------------------------------\r\n\r\nSalsa Italiano \r\n\r\n1 lb. (2 large) fresh California tomatoes, seeded and diced\r\n1/2 cup chopped red onion\r\n1 can (2.25 oz.) sliced ripe olives\r\n1 jar (6 oz.) marinated artichoke hearts\r\n2 Tbsp. lemon juice\r\n2 garlic cloves, finely chopped\r\n3 Tbsp. chopped fresh basil\r\n1/4 tsp. crushed hot red pepper flakes\r\n1/4 tsp. salt\r\n1/8 tsp. ground black pepper\r\n \r\n\r\nIn a medium bowl, combine tomato, onion and olives. Slice artichoke hearts, reserving marinade. Stir sliced artichoke hearts into tomato mixture; set aside. In a small bowl, whisk together lemon juice, garlic, basil, pepper flakes, salt, black pepper, and 2 Tbsp. artichoke marinade. Gently mix dressing with tomato mixture. Serve with roast or barbecued chicken.

Yes, tomato recipes are great! I like something from tomato and sevruga caviar
