Homemade ravioli\r\n\r\n?-1 pound of extra lean ground beef\r\n2 cups of cottage cheese\r\n2 cups of flour\r\n3 eggs, slightly beaten\r\nSalt\r\nPepper\r\n2 quarts of water\r\n\r\nSauce\r\n2 large cans of tomatoes\r\n2 tablespoons of olive oil\r\n1 bay leaf\r\n1 clove of fresh garlic, chopped\r\n? teaspoon of Italian seasoning\r\n? teaspoon of salt\r\n? teaspoon of Worcestershire sauce\r\n? teaspoon of sugar\r\n \r\n\r\nLightly brown the ground beef in a skillet, crumbling the hamburger into tiny pieces as it cooks.\r\n\r\nRemove the hamburger from the heat once cooked, drain off any excess oil and set aside.\r\n\r\nIn a large bowl add eggs, flour and ? teaspoon of salt. Blend together well making dough.\r\n\r\nKnead the dough several times and roll the dough into a ball with your hands. Cover and allow the dough to sit undisturbed while you prepare the sauce.\r\n\r\nAdd the 2 tablespoons of olive oil and the chopped garlic to a large saucepan over medium-low heat.\r\n\r\nAdd the ? teaspoon of Italian seasoning and the salt. Stir while allowing the garlic to lightly brown.\r\n\r\nAdd the 2 cans of tomatoes, stir, cover and simmer approximately 10-15 minutes.\r\n\r\nAdd the ? teaspoon of Worcestershire sauce and the sugar, stir and simmer for another 10 minutes.\r\n\r\nRemove the sauce from the heat and carefully use a potato masher to mash the tomatoes into small pieces.\r\n\r\nMash and stir, mash and stir.\r\n\r\nWhen you are satisfied with the look and feel of your sauce, add the bay leaf, cover and simmer for another 10-15 minutes, then turn off the heat and allow the sauce to sit covered until needed. Stir and check occasionally.\r\n\r\nLay the dough out onto a lightly floured working surface.\r\n\r\nRoll the dough with a rolling pin, until it is very thin.\r\n\r\nCut the dough into strips 3 inches wide.\r\n\r\nIn a bowl, mix the hamburger and cottage cheese together. \r\n\r\nSalt and Pepper lightly and blend the ingredients together well.\r\n\r\nBegin at one end of your dough strips. Place 1 teaspoon of hamburger-cheese mixture on the dough strips, 1 inch apart until you have gone the entire length of 1 dough strip.\r\n\r\nCarefully place another dough strip on top of the dough strip with the hamburger-cheese drops.\r\n\r\nCarefully press and smash the outer edges of the strips together tightly.\r\n\r\nUse a butter knife and cut evenly between the meat filling-lumps, separating and pinching the ends closed as you go.\r\n\r\nRepeat the process until you have as many ravioli’s prepared, as you need.\r\n\r\nBring 2 quarts of water to a boil.\r\n\r\nCarefully drop the ravioli into the boiling water a few at a time and as many as you feel comfortable cooking without crowding.\r\n\r\nCook the ravioli approximately 12-13 minutes, and then remove the ravioli from the water with a slotted spoon.\r\n\r\nServe the ravioli topped with your homemade tomato sauce.\r\n\r\n\r\n\r\n\r\n(from FromDebbiesKitchen.com)
