Ristretto is a short espresso pull. The amount of espresso in Ristretto is smaller than a usual shot but it is more concentrated and some people consider the flavour to be better.

In other words it's a short or "restricted" espresso, where the flow of water through the brew head is stopped at about 1 ounce.
