Smile Berry Ice Cream

Ice cream with delicious berries would really spice up your children’s snack time. This recipe can yield about 1 gallon of ice cream. It should also be noted the amount of sugar you put in the mixture should depend on the sweetness of the berries.

6 cups Milk
3 tablespoons Cornstarch
2 2/3 cups Sugar
3/4 teaspoons Salt 4 Eggs (medium or large variety)
13 ounces milk (evaporated)
2 cups berries (crushed, fresh)
2 cups Whipping cream
1 3/4 tablespoons Vanilla

Use a large bowl. Mix 1/2 cup milk with cornstarch thoroughly. Make sure it becomes smooth.
You can pour additional milk over low flame. You can add about 1 1/2 cups. Stir the mixture occasionally until smooth, thick and free from lumps.
Use an electric mixer to blend eggs, sugar, salt and evaporated milk. You can mix it with hot cornstarch. Make sure the ingredients are beaten well. You can then add the other 4 c milk, whipping cream, berries and vanilla to the mixture.

Pour the mixture in a gallon container. Place the container in a hand-crank or electric freezer. Follow the manufacturer’s directions in churning and freezing it.
Make sure the mixture is frozen until firm. You can then carefully remove the paddle. The ice cream container should be well sealed.
Ensure the ice cream freezer is filled with ice cream salt and crushed ice. Tightly cover the freezer. Allow the ice cream to season for several hours.
You can also use a spoon to transfer the ice cream to another chilled container. Store in inside the home freezer. Allow it to season there.
