Default freshly roasted

If I use freshly roasted nbeans, does it mean I have a fresh coffee?

There is a coffee plantation down the road from where I live and they roast coffee once or twice a week. It smells good when they have the right temperature, but sometimes it leaves a burnt smell in the air. I know this is a little off subject, but felt like sharing that experience hehe.
