Exclamation Neil’s Harbor White Bread

You can use this recipe in a variety of ways to enjoy the bread. You can either knead this using your bare hands or using a kneading hood of your mixer. You can add your favorite filling end enjoy eating it. I like this best with coco jam, peanut butter and butter.

Ingredients:

½ c and 1 ts sugar (white) 3 c water (lukewarm) 2 tb or 2 packs yeast (granules) ½ c melted butter (you can also use salad oil or shortening-melted) 1 heaping tb salt 11 c flour (all purpose)

Directions:

Use a large bowl for the lukewarm water. Put only 1 cup. Pour white sugar (only 1 teaspoon) in the water until it dissolves completely.

Carefully put the yeast granules. Set aside for about 10mins. Make sure the yeast is dissolved before you stir it.

You can then add ½ c white sugar, 2 c water (lukewarm), 1 heaping-tablespoon salt, ½ c melted shortening/salad oil or butter to the yeast mixture. Beat all the ingredients and only stir 1 cup bread flour (all purpose) in an interval. This would make about 9 cups using the mixer. Use the bread hook to replace the paddle when the dough gets to be sticky.

Kneading by hand:

Place dough on a floured surface. Scrape and top it again with flour before kneading it. Use your hands to collect the dough towards you. Push it then away using your bare palms.

Fold the dough and divide it into two. The dough should be folded facing you. Make a ¼ turn and repeat the process from pushing to turning.

Continue putting flour on top of the dough. This will keep the dough from sticking. Continue kneading also for a few mines. Make sure the dough is elastic and smooth before you stop.

Kneading by machine:

Place dough inside the mixer bowl. Make sure the dough hook is attached to the mixer. Turn the mixer to low and allow kneading for about 5mins.

Check mixer from time to time. The dough must not crawl its way out. Shut off the machine and push dough back if it starts crawling out. Continue the kneading process.

Use a large bowl (oiled). Place the dough inside. Flip to oil both sides. Use a plastic wrap to cover it. The cover should be loose and place it in a warm area.

Allow the dough to rise for about 1-2hrs. Make sure the dough has doubled. You can punch it to get rid of the bubbles. You can then divide it into 3 separate parts.

Form and shape the dough before putting it in a loaf pan (greased). Use a dish towel to cover all loaves. Set aside in a warm area and allow rising again.

It will take an hour for the loaves to double. Preheat oven at 400F. Bake dough for about 20mins.

The bread will turn golden brown. You’ll know it’s ready when you tap the bottom. It should sound hollow.

Remove the loaves from the pans. Set aside and allow cooling.
