Smile Cantaloupe Bread with praline Glaze

Invite yourself to the sweet scent of cinnamon. Entice your appetite with the taste of praline. Savor the freshness of cantaloupes. Pamper yourself with this recipe.

1 cup oil 3 eggs 2 cups sugar 2 cups cantaloupe 1 tablespoon vanilla 2 1/2 c flour 1 teaspoon soda 1 teaspoon salt 3/4 teaspoon baking powder 1 teaspoon ginger 2 teaspoon cinnamon 1 stick of butter 1/2-1 cups pecan 1 2/3 cups brown sugar

Use a large bowl. Beat the eggs. Mix it with sugar, vanilla and oil.

The cantaloupe is then peeled to 2” in chunks including puree. Add the cantaloupe to the mixture. The dry ingredients are then sifted and added to the liquids.

Grease and flour 9x5 sized loaf pans. Pour the mixture into the pans. Preheat oven at about 325F. Bake the mixture for about an hour.

Use the microwave to melt brown sugar and butter. This takes only about 3mins. Make sure to stir by the minute. Fold this into the pecans. Place this on top of warm bread.
