Smile INJERA (ETHIOPIAN FLAT BREAD) Recipe

I learned this recipe from my vegetarian aunt. I am not a vegetarian myself but enjoyed this vegetarian flat bread recipe. It is a very healthy and delicious bread recipe for health conscious people.

You will need the following:

• 1/2 teaspoon Baking soda
• 1/2 teaspoon Salt
• 1/2 cup Self-rising flour
• 1/4 cup Whole wheat Flour
• 2 ½ cups Water, warm
• 1 3/4 cups Flour
• package Dry yeast

PROCEDURES:

• Mix the yeast and flour in a glass or ceramic bowl.
• With the use of warm water mix into a fairly thin, smooth batter.
• Sit the mixture under room temperature for three days
• Mixture must be stirred once a day. Expect the mixture to bubble and actually rise
• To prepare the Injera, put the salt and salt baking soda
• Allow 10-15 minutes for the batter to sit
• Use a small 9-inch nonstick skillet and heat.
• let a drop of water bounce on the pan's surface,
• Place about 1/3 cup of the batter in the skillet quickly, all at once.
• At the same time swirl the pan to have the entire bottom evenly covered
• Injera is now actually cooked on one side. Do not allow the bottom to turn brown
• When the moisture has gone and lots of holes appear on the top surface, take the Injera.
• Stack Injera as you go along while allowing it to cool
• Notice if the first Injera was not well cooked, if so place lesser amount of Injera mixture or take more time cooking the mixture.
• Injera must be pliable and soft enough that it can be folded and rolled
