Thumbs up Zucchini Bread Recipe

This recipe is from a good friend who happens to have a mom that makes the best bread in town. It’s a good reason to grow Zucchini. Hope you guys like it

This recipe makes two loaves of zucchini bread.

You will need the following:

• 2 cups sugar
• 2 cups grated zucchini
• 3 cups sifted all purpose flour
• a cup of chopped nuts
• a cup of oil (Mazola, Wesson, etc.)
• 1/4 teaspoon of baking powder
• 1 teaspoon of soda
• 1 teaspoon of salt
• 2 teaspoons of cinnamon
• 3 teaspoons of vanilla (= 1 tablespoon)
• 3 eggs

Should you decide to do one loaf just cut the recipe in half and use 2 eggs.

PROCEDURES:

• In a medium sized bowl mix salt, flour, baking powder cinnamon and soda.
• Set aside the dry mixture. Start to grease and flour your pans
• You may now carefully grate your small zucchini. Large zucchinis should be peeled and seed before grating.
• Carefully chop the nuts and set aside.
• Beat eggs until foamy with the use of an appropriate large mixing bowl
• Continuously beat the egg while gradually adding the sugar. Keep beating until thick.
• Put the oil and vanilla on your thick mixture then blend.
• Add zucchini and your dry mixture. Mix well then blend
• Fold in nuts as we pour thin batters into the greased and floured pans.
• Bake in 350F oven for 50-60 minutes
• Let the pan cool for 10 minutes before removing the your zucchini bread from pan

Pans:
Makes two 9 x 5 x 3 or
Makes four 7.325 x 3.625 x 2.25 - bake only for 45 minutes when using these pans.
