Starters and Snacks :: Warm Hor d'oeuvres
1 lb. skinless boneless chicken
breasts, cut into 24 cubes*
3 Tbsp. soy sauce, divided
1/4 C. peanut butter
2 Tbsp. honey
1 Tbsp. Oriental sesame oil
1 (12 oz.) bottle chili sauce
3 Tbsp. chopped fresh parsley
1 med. red, green or yellow bell pepper,
cut into 24 (1-in.) squares
Marinate chicken in 2 Tbsp. soy sauce for 15 min.
Meanwhile, for sauce, thoroughly Mix together the remaining soy sauce, peanut butter, honey and oil; stir in chili sauce and parsley and set aside.
Thread a piece of chicken and bell pepper square onto sm. bamboo skewers that have been soaked in water. Broil 4 in. from heat source for 6 min., turning once. Serve with sauce.
* 1 lb. boneless pork loin may be substituted. Slice 1/2 in. thick; cut slices into 1/4-in. strips.
