Recipe for cooking artichoke squares


Starters and Snacks :: Warm Hor d'oeuvres


Artichoke Squares


2 jars marinated artichokes
2 Tbsp. canola oil
1 bunch scallions, sliced
1 clove garlic, crushed
1 C. grated Cheddar cheese
1/2 tsp. Worcestershire sauce
1/4 tsp. Tabasco sauce
4 eggs, beaten
1/2 C. cracker crumbs
Minced parsley


Drain and save the oil from the artichokes, then chop the artichokes. Saut onion in artichoke oil plus the 2 Tbsp. of canola oil.


Mix together all ingredients except cracker crumbs and parsley. Put into greased 8-in. square pan. Sprinkle with cracker crumbs and minced parsley. Bake at 325 degrees F for 35 to 40 min. Cool, then cut into 2-in. squares.
